EXTRACTS AND FLAVORS
The U.S. Department of Agriculture has authorized the use of this Commercial Item Description in preference to Federal Specification EE-E-911.
This Commercial Item Description (CID) covers extracts and flavors, packed in commercial ly acceptable containers, suitable for use by the Federal Government.

All flavors shall be nonalcoholic (less than 0.5 percent ethyl alcohol).
Lemon flavor. Lemon flavor shall be a mixture prepared in the proportion of 20 volumes oil of lemon diluted with cottonseed oil to 100 volumes. Cottonseed oil shall be thoroughly refined, winterized, sweet, neutral, and free from sediment, off-flavors, and odors. The oil shall remain clear after being held for 5 hours at 32°F and shall have a free fatty acid content not to exceed 0.05 percent (as oleic) when tested in accordance with the Official Methods of Analysis of the Association of Official Analytical Chemists. Preservatives (antioxidant) suitable for food use may be added. The lemon flavor shall be free from rancidity. At a temperature of 65-70°F, the lemon flavor shall be transparent and free of sediment.
